A Little Piggy – Totō

I love it when a product is created for a specific purpose in the market it finds itself in. Totō knows that there’s almost 200 other burgers it has to compete with, but it knows what its core customer base loves. A half-foot tall stacker isn’t going to work in a café that primarily serves public servants, nor would some avant-garde reinvention of the burger. Totō knows this and has produced a humble, perfectly executed burger that has enough tricks up its sleeve to make it stand out.

The patty is made of pork jowl and it’s so well cooked. The lard has rendered beautifully, neither slickly fatty, nor rough or dry. It results in a juicy bite every time I sink into it. The char on the edges is lovely, giving that smoky bacon flavour without an influx of salt. The cucumbers add freshness to the char, and the bun is the perfect chewiness for a lunch time sandwich. it’s just really well put together.

A Little Piggy is a really clever burger that won’t disappoint any of its usual clientele. It’s got perfectly cooked meat, smartly selected accompaniments and for $18, makes the perfect lunch.
