There’s not nearly enough Korean Fried Chicken in Wellington.
Like, there’s the odd 치맥 around town, but nothing that really makes me want to don plastic gloves and stuff my face until it’s smeared with so much sauce, I can’t tell where my lips end.
The Bao Gochu Crazy by Chow captures that feeling perfectly. Two pieces of crispy fried chicken thigh with gochujang mayo with kimchi pickles nestled in a soft white bao bun. Sauce everywhere. The chicken is pounded thin, but far from dry and the coating around it remains crispy despite the sauces that surround it. The chicken has a deep, rich flavour, I assume in part to its red wine marinade. The pickles are crunchy and juicy, the bun is steamed goodness. The spice is perfect for a work lunch.
The fries it comes with are a small portion, but they’re all you need besides the double chicken you get. It’s a really well put together dish for a very, very accessible price point. Great burger!
