I love it when a burger plays it risky. When they come up with a concept that initially sounds insane, but, when executed, absolutely blows me away.
Le Ciel’s Forbidden Fantasy is an innovative dessert burger with mushroom gelato and a sage gelée that’s so refreshing and tasty. The ice cream actually tastes like mushroom. The passionfruit leather cuts through the earthy flavours with its acidity. The gelée brings it all together with a natural, herby vibe. It’s a risky move that brings out the best of all the parts that go into it.
The charcoal bun is made in house and mine was fresh out of the oven. I ended up taking too long to take a photo and the ice cream melted a little. Oh well, more for me to slurp up. My advice is to use a strong hand with the provided knife. The sage gelée is encased in a chocolate layer that takes a couple of hit to break through. But once you’re in, just taste a little bit of it on its own. It’s delicious.
The result is a herby, earthy, mushroomy goodness that only comes about through iteration upon iteration of testing. I urge you to take the risk because there’s nothing else like this in Burger Wellington.
